Chicken Chow Mein

Put this dish on the table in about ten minutes by using shredded rotisserie chicken with a few crisp vegetables. Faster than take out - just as delicious - bariatric friendly! 
 
Ingredients
  • 1 tablespoon peanut oil
  • 1 medium onion, sliced
  • 2 garlic cloves, minced
  • Half a small head Napa Cabbage, finely shredded, about 4 cups
  • 1 cup snow peas
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 1/3 cup chicken broth
  • 2 teaspoons cornstarch
  • 2 cups shredded chicken, from rotisserie chicken
  • Sesame seeds
 
Instructions
 
Heat the oil and stir fry the onion and garlic until translucent. 

Add the cabbage and snow peas and toss until softened, 2 to 3 minutes.
 
Blend the soy sauce, sesame oil, broth and cornstarch.
 
Add to the hot pan and toss until thickened and glossy. 
 
Fold in the chicken, scatter with sesame seeds and serve.
